200 g green peppercorns

2 tablespoons fish sauce

How to make Grilled Snails with Green Peppercorns

-First, soak the snails in rice water for about 1 hour to remove all the slime. Then, drain them.

– Briefly boil the snails: Add a few lime leaves and 2 crushed lemongrass stalks to the pot of snails. Turn off the heat as soon as the snails start to boil.

– Prepare the seasoned fish sauce for marinating the snails: 2 tablespoons fish sauce, 1 tablespoon minced garlic, 1 tablespoon sugar, 1 tablespoon vinegar, ½ tablespoon pepper, 1 teaspoon chopped chili.

– Marinate the snails with the seasoned fish sauce and green peppercorns for about 15 minutes.

– Then grill the snails. They are ready to eat when the meat is just cooked through. Avoid grilling them for too long, as this will make them tough and less delicious.
