At dusk, the whole family gathered around a simple meal: a small, blackened clay pot of kho qu\u1eb9t and a plate of green vegetables.\r\n\r\n\r\n\r\n\r\n\r\nThe light of the oil lamp flickered on and off.\r\n\r\n\r\n\r\n\r\n\r\nThe buzzing of mosquitoes filled the air.\r\n\r\n\r\n\r\n\r\n\r\nThe cheerful \u201cqu\u1eb9t qu\u1eb9t\u201d sound of bamboo chopsticks scraping the bottom of the clay pot.\r\n\r\n\r\n\r\n\r\n\r\nLips tingled from the heat of the chili.\r\n\r\n\r\n\r\n\r\n\r\nNear the end of the meal, siblings would sometimes compete for the chance to mix rice directly into the clay pot and eat straight from it.\r\n\r\n\r\n\r\n\r\n\r\nThat was childhood\u2014truly full of \u201cstorms,\u201d yet incredibly memorable and delightful.\r\n\r\n\r\n\r\n\r\n\r\n[adsres]\r\n\r\n\r\n\r\n\r\n\r\nHow proud it feels to see this once humble, inexpensive dish now featured on restaurant menus and air-conditioned dining rooms, praised by many Western guests and regarded as a distinctive Vietnamese specialty.\r\n\r\n\r\n\r\n\r\n\r\nMany people who move to Saigon to make a living, busy with daily worries, may unexpectedly encounter this childhood dish at a gathering\u2014and find themselves overwhelmed by nostalgia mixed with quiet joy.\r\n\r\n\r\n","protected":false},"excerpt":{"rendered":"<p>Some rustic dishes, once thought to be found only in the countryside and rice paddies, have now appeared on restaurant tables and become attractive dishes that entice many people to enjoy.
